Comfort food – the words fill me with toasty thoughts and make me long for fall and winter weekends, fire in the fireplace, cozied up in my favorite chair, all decked out in my comfie clothes with a bowl of something warm that’s been baked low and slow in the oven.
I love the idea of a single pan meal. Not the type that you make on the top of the stove, but one that is roasted in the oven. In my ongoing quest for the perfect clay cookware, I stumbled onto the use of a Cazuela, which is Spanish for cooking pot. I learned it is also a common name for comfort dishes that include a medium-thick broth that results from cooking meat and vegetables together in the oven in a low-sided rustic clay pan. HELLO! What a perfect marriage! I found that Cazuela recipes are often prepared in Chile, Peru, Puerto Rico, and South America and it seems that every recipe I have run across that references Cazuelas look fabulous and has an amazing list of ingredients.
I just had to design a Cazuela cooking pot, since they seem like the “go to” pan for just about all my favorite baking and roasting recipes.
Unlike many metal pans, clay Cazuelas retain heat after they are removed from the oven. This ensures food stays warm throughout the meal. I’ve tested this and have even baked a coffee cake in mine. The cake stayed warm and steamy all the way to a meeting in town about an hour away!
I’ve used my Cazuela for everyday baking and roasting, including making a delicious roast chicken, preparing potato gratins or baking a beautiful apple crisp. I truly is the best “go to” pan.
Other color options:
These Cazuelas range in size just a little. All are hand-thrown on the potter’s wheel, hand trimmed, handles are molded by hand and attached. Variations occur in size, just a little possible sway, and the glazes I use include many layers of different colors, all hand brushed. Expect variation, love that you pot will have it’s own unique character and charm – just like you, just like the food you’ll make and serve it in.
